Rhubarb Salsa
Tangy and wonderful!
1 large stalk rhubarb diced 1 yellow bell pepper diced 4 roma tomatoes seeded and diced 1/4 cup onion finely diced (red or sweet) 1/2 jalapeno finely diced (use the seeds for a little spice or no seeds for more mild) 1 clove garlic finely diced 1 tablespoon cilantro chopped 1 tablespoon parsley chopped 1/4 cup olive oil 2 tablespoons honey 1 teaspoon salt 1. Combine all ingredients 2. Let sit in fridge for 1 hour 3. Serve with chips, grilled fish, BBQ chicken, pork, etc
